Dark & Stormy

There’s a reason this one never leaves the bar menu. The Dark & Stormy is bold, spiced, and built for moody weather—ginger beer, dark rum, and a squeeze of lime served over ice. The name sounds dramatic, and the drink delivers: strong, bright, and a little unpredictable in the best way.

The rum floats on top like a storm cloud—deep, molasses-dark—while the ginger beer keeps it light and sharp underneath. It’s a highball with backbone. Stir it or don’t. Either way, the layers hold.

Recipe

  • 2 oz dark rum (like Gosling’s Black Seal)

  • 4 oz ginger beer

  • ½ oz fresh lime juice (optional but recommended)
     

Build in a highball glass over ice. Add rum last to float. Garnish with a lime wedge.

A note: The Dark & Stormy was born in Bermuda and trademarked by Gosling’s—but versions of it have been around for over a century. Originally a sailor’s drink, it was built for heat, salt, and unpredictable skies.
