12 oz Italian spaghetti
6 tablespoons unsalted butter
2 teaspoons fresh ground black pepper
1 cup finely grated parmesan
1/2 cup finely grated pecorino
Boil 3 quarts water. Season boldly with salt, add pasta and cook until al dente.
Meanwhile, melt 3 tablespoons of butter in a large skillet over medium heat. Add pepper and cook about 2 minutes until toasted. Reduce heat, add 3 to 4 tablespoons of pasta water and stir to make a creamy sauce.
The last step is important: With tongs, transfer wet pasta directly from simmering water to skillet. Do not strain. Add balance of butter and parmesan. Toss, toss and toss! Remove from heat then add pecorino. Swirl with tongs into individual warm pasta bowls and serve immediately. Buon appetito!
